Brut Restaurant in Llubí, Mallorca, is a truly unique dining experience where radical seasonal cuisine meets creativity and sustainability. Founded by Eduardo Martínez-Gil, a Buenos Aires-born chef who trained with Ferran Adrià at El Bulli and staged at El Celler de Can Roca, Brut reflects his passion for food, nature, and the raw, authentic spirit of life.

Every night, sixteen diners gather around the open kitchen with no idea of the menu, which evolves naturally with the seasons. The focus is on curiosity and delight: each dish tells a story, surprises the senses, and celebrates the ingredients in their fullest expression. The kitchen follows a zero-waste philosophy, using fermentation, distillation, enzymatic maturation, and other homemade processes to craft deeply technical, responsible, and healthy cuisine.

Brut also extends this creativity to drinks, producing kombuchas, craft beers, sake from Mallorcan rice, mead, cider, tepache, and chicha. Carefully selected wines from small local producers complete the experience.

More than just a restaurant, Brut is a place where rules are challenged, where the local becomes universal, and where cuisine is shared, not simply served.
