Chef Joan Marc draws on a lifetime of experience, from his childhood in Inca to training in top Michelin-starred kitchens in Barcelona and years leading a Relais-Château restaurant in Pollensa. Returning to his roots, he has created a dining experience that celebrates the new Mallorcan cuisine: fresh, simple, and full of flavour.
Local produce is at the heart of every dish, with strong ties to nearby farmers supplying organic cheeses, lamb, suckling pigs, and the famous “xeixa” cereal, used in the house-made organic bread that accompanies meals.
