Colombian chef Michel Guzmán recreates his country's mestizo cuisine, a mixture of indigenous, Spanish, African and French influences.
The menu includes flavoursome dishes like "Creole rabbit stew with achiote, yellow corn, bitter orange vinegar and suero costeño", "Seabream with coconut milk, Amazonian ají, onion, lime and green plantain" or "Soursop ice cream with guava mousse, 70% cocoa chocolate, candied black sesame and caramelised coconut".
