Chef Gonzalo Chávez personally selects a rotating menu of the finest cuts each week, ensuring guests enjoy the freshest and most flavourful offerings. The restaurant’s signature dry-aged meats include Bos Taurus Primigenius, authentic Mountain Brown Ox, Simmental, and Certified Angus from Argentina, all cooked over open flames at the moment to capture the perfect flavour and texture.

Brasa Madre also caters to seafood lovers, with dishes sourced from the Mediterranean. Highlights include the innovative turbot tiradito, a sashimi-style turbot topped with crispy pork crackling, and empanadas filled with slow-cooked osso buco and provolone cheese, a delicious twist on the traditional Argentinian favourite.

In addition to the main dining area, Brasa Madre offers a private space ideal for intimate dinners or corporate events for up to twenty-nine guests.
