Katrin Cetin - Operations Manager at Ca's Xorc Boutique Hotel & Restaurant

Tell us a little bit about your business, how it started out and where you're based.

Ca's Xorc Boutique Hotel & Restaurant is situated in the northwest of Mallorca, between the rugged mountain massif of the Tramuntana and the picturesque towns of Sóller and Deià, surrounded by flowering gardens and ancient olive groves. I remember how impressed I was with the views and the atmosphere up here the first time I walked up the steps to reach the terrace. I have to say that this feeling comes back to me every day I come to work.

How long have you been in your current role and how long have you been with the company?

My role as Operations Manager at Ca's Xorc Boutique Hotel & Restaurant started this year in May.

What were you doing before?

After spending a long time in different 5-star hotels in my home country, Germany, my love of hospitality took me to Switzerland, followed by a private island in Fiji. After that, I arrived in Mallorca to work in a 5-star Gran Hotel.

What makes Mallorca a special place to be for someone in the hotel business?

Mallorca is a very special place for me because I am working on a beautiful island which is always growing. I also have the pleasure to meet people from different countries.

What makes Ca's Xorc so special? What sets you apart from everyone else?

We have an outstanding view straight down to the sea and a wonderful garden. This, together with the team who welcome guests with a smile and say farewell to them with a hug, is what makes us different.

You have hosted a good deal of celebrities including Claudia Schiffer, Bono and Mick Jagger. Why do you think they choose Ca's Xorc for their retreats?

I think that they choose us because of the privacy we offer, the quietness they can enjoy here and also because of the charming service that makes guests feel like they are at home.

What is in store for the future with your business, any exciting projects in the pipelines that you can share with us?

We are currently building a huge vegetable garden to offer even more homegrown veggies and herbs to our guests. We are also pleased to announce that we will have our own Ca’s Xorc wine next year.

Tell us a bit about the history of your gorgeous finca. What was it originally and how was it renovated?

Ca’s Xorc was once an estate that included an oil mill. It used to be a private residence which later turned into an olive oil production estate. The farm was first mentioned in 1790 and it has been a hotel since April 2000.

Can you tell us a bit about your gourmet restaurant? What sort of food do you serve? All the produce you use is local, where do you source it from?

Our food is fresh and natural, healthy and eco-friendly as well as global and local. We seek to achieve clear and clean tastes and nuances, developing a natural, fresh and dynamic cuisine based on the product but without pretensions. Within our menu, we are also providing the best choices also for vegetarian and vegan people.

You even produce your very own olive oil. How did this come about?

Ca’s Xorc always used to produce its own olive oil. In fact, its mill is one of the few intact olive presses in Mallorca. It is worth a visit! Our restaurant is nestled between the parts of this oil mill.

Do you remember your first time in Mallorca?

Yes, it was the end of October 2011 and we discovered the island going back and forth, up and down with a rental car. After spending four wonderfully sunny days with really positive impressions, we knew that this was an island where we could live and work.

What is your favourite area in Mallorca?

My favourite area is the region between Valldemossa and Port de Sóller. I like the mountains with their refreshing summer breeze, breathtaking views and quiet spots all to myself.

Any restaurant on the island you can recommend for a special occasion?

I also love eating in the mountains so you can find me at the Michelin-starred Es Racó d’es Teix in Deia. However, my favourite restaurant is the also Michelin-starred Adrian Quetglas down in Palma.

And a great bar for a drink?

If I have the time to enjoy a nice drink, the best place for me is my terrace at home.

If someone was coming here for the first time, what would you suggest they absolutely must do or see in Mallorca?

To be honest, I am not very knowledgeable about the touristy side of the island. My suggestion would be to rent a car and drive around the island to explore it. You will always find a nice spot to stop, see things and meet people.

What is your favourite time of year on the island?

I very much like the autumn. The weather, including the temperature, is still really nice and warm. Everything is also still open, from museums and galleries to restaurants. I also like the autumn because it is when Mallorca starts to get a bit quieter.
